:mmm... cake:


This cake has gone down a treat in our house....
Here's the recipe

Banana Orange and Date Health Loaf

90g butter
2 teas grated orange rind
1/3 cup raw sugar
2 eggs
1 cup mashed bananas ( I used 3 over ripe bananas)
3/4 cup of chopped dates
2 cups wholemeal SR flour
1/2 cup orange juice

Grease a 14cm x 21 cm loaf pan and line.
Cream butter and sugar and rind until light and fluffy, beat in eggs one at a time. 
Stir in dates, then half the flour and half the orange juice, then stir in remaining flour and orange juice; stir until smooth.
Spread mixture in  prepared pan.
Bake in moderate oven for about 1 hour.  Stand for 5 minutes before turning on to wire rack to cool.

I then just made a simple icing mixture adding a little orange juice and topped with coconut..
