I hate not having some home cooked biscuits in the freezer or cupboard for school lunches, so tonight I whipped up a batch of these little gems from a Womens Weekly cook book....

Fruity Cornflake Biscuits





Here is the recipe..


5 cups  cornflakes
1 cup coconut
1/2 cup brown sugar
1 cup of sultanas
1 cup dates chopped
1 cup SR flour
185g butter
2 eggs

NB: instead of sultanas and dates I used 2 cups of a dried fruit medley mix

Combine all dry ingredients together, mix well.  Add melted butter and lightly beaten eggs, mix well.
Take heaped tablespoons of mix and shape into rounds and then press flat between palms of hands.  Place onto greased oven tray and bake in mod oven for about 10 mins or until golden.  Let to stand on tray for 5 mins before placing onto wire rack to cool.
